Background
Founded in 2004, Monmouthshire-based Trealy Farm Charcuterie, produces award-winning artisan charcuterie using traditional methods and the finest quality ingredients. The company produces a range of over forty different products including salami and chorizo as well as air-dried, cured and cooked meats.
Trealy Farm Charcuterie supply their products to businesses across the UK; from restaurants, chains, delis, pizzerias and pubs, to hotels, farm shops and caterers. They also sell their products direct to customers through their website.

Support from ZERO2FIVE
Trealy Farm Charcuterie has a long history of working with ZERO2FIVE Food Industry Centre, with the company receiving ongoing support to maintain their SALSA food safety certification.
When a new technical manager joined Trealy Farm Charcuterie in February 2026, a ZERO2FIVE technologist delivered one-to-one mentoring sessions to bring them up to speed with the company’s food safety management system. Focus topics included supplier approval, areas for improvement flagged during Trealy Farm Charcuterie’s previous SALSA audit and traceability.
In preparation for Trealy Farm Charcuterie’s SALSA audit, ZERO2FIVE carried out an internal audit and diagnostic assessment of the company’s food safety management system on site, identifying compliance to the standard and areas for improvement. As a result, we delivered further mentoring sessions to help them with any necessary updates to build a robust, practical and sustainable system fit for the future.
Benefits of the support
Trealy Farm Charcuterie’s new technical manager successfully led the company through their latest SALSA audit in February 2026. Maintaining SALSA certification is vital in enabling the company to continue supplying their existing customers.
ZERO2FIVE is already supporting Trealy Farm Charcuterie with a further review of their food safety management systems and will deliver bespoke, on-site mentoring for any recommended improvements in line with the new issue of the SALSA Standard.
