Success story: Trealy Farm Charcuterie

Background

Founded in 2004, Monmouthshire-based Trealy Farm Charcuterie, produces award-winning artisan charcuterie using traditional methods and the finest quality ingredients. The company produces a range of over forty different products including salami and chorizo as well as air-dried, cured and cooked meats.

Trealy Farm Charcuterie supply their products to businesses across the UK; from restaurants, chains, delis, pizzerias and pubs, to hotels, farm shops and caterers. They also sell their products direct to customers through their website.

Support from ZERO2FIVE

Trealy Farm Charcuterie has a long history of working with ZERO2FIVE Food Industry Centre, with the company receiving ongoing support to maintain their SALSA food safety certification.

When Trealy Farm Charcuterie’s technical manager left the company in May 2024, another member of the team from a non-technical background stepped into the role.

To help develop the new technical manager’s food safety management expertise, a ZERO2FIVE technologist delivered fortnightly one-to-one mentoring sessions, which covered a range of subjects including prerequisite controls, HACCP, microbiological & environmental analysis and traceability.

The new technical manager also attended ZERO2FIVE’s SALSA Audit Ready Workshop, which helped delegates to understand the SALSA audit process, what happens after an audit, how to submit corrective actions, and a review of the top 10 non-conformances and how to avoid them.

In preparation for Trealy Farm Charcuterie’s SALSA audit, ZERO2FIVE carried out an internal audit of the company’s food safety management systems and delivered further mentoring to help them with any necessary updates.

Benefits of the support

Trealy Farm Charcuterie’s new technical manager successfully led the company through their latest SALSA audit in February 2025. Maintaining SALSA certification is vital in enabling the company to continue supplying their existing customers.

ZERO2FIVE is already supporting Trealy Farm Charcuterie with a further review of their food safety management systems and will deliver mentoring for any recommended improvements.
