Success story: Cocoa Nofel

Background

Cocoa Nofel is a small artisan start-up based in Bridgend that was founded in 2026 by Nicola James. Inspired by a passion for classical literature and a love of hot chocolate, the brand was created to combine storytelling with indulgent drinks.

The business specialises in luxury hot and iced chocolate products, each creatively named after famous novels and literary characters. Signature offerings include Wuthering Heights dark hot chocolate, Mr Darcy roast coffee mocha, and The First Edition sweet hot chocolate.

To support the transition of Cocoa Nofel from a concept to market-ready products, Nicola contacted ZERO2FIVE for technical guidance.

Nicola began by attending one of ZERO2FIVE’s Legal Labelling workshops, which are designed specifically for early-stage businesses and start-ups. These sessions cover key considerations for mandatory food labelling, including ingredient lists, nutritional information, allergen declarations, and date marking (best before and use-by dates), as well as guidance on voluntary elements such as nutritional and health claims. This training enabled Nicola to begin developing her own product labels.

Following the workshop, Nicola received one-to-one support to strengthen her labelling compliance in more complex areas such as compound ingredients and Quantitative Ingredient Declarations (QUIDs). In addition, ZERO2FIVE supported Cocoa Nofel with nutritional analysis. Using NutriCalc software, they verified the accuracy of Nicola’s own nutritional calculations for three products within her range.

ZERO2FIVE also provided practical support in improving production efficiency. Initially, Nicola was weighing individual ingredients for each sachet, which was time-consuming and limited scalability. A ZERO2FIVE technologist provided help with more efficient batch processing methods, in particular techniques to ensure the consistent mixing of ingredients.

Finally, in preparation for an Environmental Health Officer (EHO) inspection, ZERO2FIVE provided Nicola with the information and knowledge to develop and implement production documentation, including goods-in and goods-out records. This enabled Cocoa Nofel to demonstrate that they had fully traceable products.

Benefits of the support

Following the support from ZERO2FIVE, Cocoa Nofel successfully passed its Environmental Health inspection, achieving the highest possible Food Hygiene Rating Scheme score of five.

Nicola is now actively approaching local farm shops, book shops and delicatessens to explore retail opportunities for her products. In addition, she plans to promote and sell Cocoa Nofel’s range at local markets, craft fairs and literary festivals.

Looking ahead, Nicola aims to further develop her product offering by introducing miniature chocolate “books,” designed to be used as a decorative garnish for her hot chocolates.
